These help absorb pollutants and the many pesticides used in agriculture are also very beneficial to the soil.
In ancient times they say that Perseus, the Greek hero, returning from a journey that lasted a very long time, refreshed himself with the water collected from the cap of a mushroom found by chance. Happy with the unexpected and necessary pleasure he created a colony which he called "MYCENAE" which means "mushroom" in the Greek language.
In China some mushrooms are used for the preparation of liqueurs and herbal teas which provide many benefits and are called "Lingzhi" or "Reishi".

When the temperature is very cold, mushrooms have a harder time growing and deteriorate more slowly.
Agrippina, wife of the Roman emperor Claudius, poisoned her husband with mushrooms.
Porcini mushrooms contain spores and should be called "Sporophyri" or "Carpophori". Their nutritional value varies according to the species: they generally contain a lot of water and minerals such as zinc, iron, phosphorus and copper.
The caps of many species of mushrooms, especially those of boletus and porcini mushrooms are excellent if passed on a very hot plate.

Another perfect way to cook mushroom caps with gills, puffballs and porcini mushrooms is to bread them and fry them.
Chanterelles and chanterelles are usually stewed for about 15/20 minutes.
Mushrooms should always be cooked a little, with a few sauces that release easily, with a little tomato because it covers their flavor but with many spices and smells that instead enhance it.
For the nails, however, it is advisable to cook them for at least 25 minutes as they contain a toxin, which is not lethal but harmful, which dies only after prolonged cooking. It is also recommended not to put raw nails in the freezer, because the toxin present would not die even after long cooking.

To make a sauce or risotto with mushrooms, do not put them in a saucepan at the beginning of the preparation because if they cook too much, they would become woody. Cook the mushrooms separately, season them and add them only 2/3 minutes before.
